Honey and Spelt Banana Bread
This recipe has
a delicious pairing of spelt and oat flours, which give the bread a warm, nutty
flavor. It is moist and dense, but it must be made with very ripe bananas.
The flavor of ripe bananas and honey will bring a complex sweetness not obtainable
by conventional white sugar. Go ahead and give it a try!
Dry Ingredients
2 cups spelt flour
1 cup oat flour
1 tsp. baking soda
1⁄2 tsp. baking powder
1⁄2 tsp. salt
1 1⁄2 tsp. cinnamon
Wet Ingredients
3 very ripe bananas
1⁄2 cup maple syrup
1 stick butter, melted and cooled
2 tsp. Vanilla
3 eggs
Directions
1. Preheat oven to 350 degrees.
2. Line a glass loaf pan with parchment paper so that it forms a "sling" (one
solid piece that goes from side to bottom to side, with open ends). Grease
the ends of the pan.
3. Sift spelt flour, measure two cups. Sift oat flour, measure one cup.
4. Put flours together in sifter with baking powder, soda, salt and cinnamon.
Sift into large mixing bowl and set aside.
5. In separate mixing bowl, mash bananas with fork or potato masher until
smooth.
6. Add honey, mixing with wire wisk until fully combined.
7. Wisk in eggs, one at a time.
8. Add melted butter and vanilla to wet ingredients and mix well.
9. Add wet mixture to dry ingredients all at once and combine with as few
a strokes as possible. Mixture will be slightly lumpy.
10. Pour into parchment lined glass loaf pan and bake at 350 degrees for
50-60 mins. Let cool 10 mins and remove to wire cooling rack.
11. When fully cooled, wrap tightly in plastic wrap and store for 5-7 days.
